Pasta Dinner for 1

Tonight I had the pleasure of cooking dinner just for myself. The kids ate early and my husband went out. So I cooked up pasta with anchovies, garlic, herbs and chilli and topped with crispy breadcrumbs, it was delicious! Unfortunately the kids got out of bed and joined me on the couch and complained that I had made something they didn't like!

Pasta for 1

1 serve spaghetti, cooked to packet directions
1 tbsp olive oil
2-3 anchovies
1 small clove garlic, finely chopped
sprinkle chilli flakes or fresh chilli, chopped
2 tsp capers
1 small handful basil leaves, chopped
1 small handful parley leaves, chopped (or any herbs you like really)
drizzle good olive oil

Add olive oil and anchovies to a frypan and cook over medium heat, breaking up the anchovies. Add the garlic, chilli and capers and cook briefly to cook the garlic but not brown. Add the herbs and pasta, toss to coat and drizzle with extra olive oil to taste. 

Serve and hope you get to eat it in peace and quiet!


  1. Cool flavours in this! Wow you've cooked some amazing things - how do you find the time with your girls?!! I struggle with one little 7mth boy!

    not sure which to try first the tomato and feta salad, eton mess and trifle or the Almond vanilla and cofee brittle!!!!


  2. Thanks! Cooking is my escape; when life is chaos and I can't keep on top of everything I bake and it makes me feel better.

    I saw one of the teachers today who was the recipient of the brittle and she said she couldn't stop eating it all holidays!
